- ¼ cup rolled oats (or instant oats)
- 2-3 egg whites
- 1 scoop vanilla protein powder
- 1/3 cup non-fat cottage cheese
- 1 tbsp olive oil (or grape-seed oil)
- Cinnamon to taste
- Optional: 1 cup blueberries OR 1 banana sliced
Method:
- Mix oats, egg whites, protein, and cottage cheese in a blender until smooth. Add fruit, if desired.
- Refrigerate mixture for 3 minutes while heating a pan over medium heat.
- Pour 1 tbsp olive or grapeseed oil into pan until pan is hot.
- Place 2 protein pancakes onto pan and let cook for 2-3 minutes/side or until golden brown.
